Extraction may be defined as a process which involves Chemical Separation of individual components from a mixture by means of a Solvent. Traditional Solvents used for this purpose are either Polar or Non-Polar Solvents depending on the components to be extracted and separated. Once the Component is separated, the component needs to be concentrated by total removal of the solvent by distillation. Distillation requires heating of the mixture known as Miscella and this heating causes damage to the natural phenomena of the component i.e. its texture, colour and its characteristics aroma.

Super critical extraction which can also be termed as high pressure extraction using Super critical gases is a novel method which avoids the above mentioned shortcomings. The extraction method is based on the principle that substances dissolve at a much higher rate in super-critical gases than would normally be extracted at a given vapour pressure. Carbon dioxide has proven to be one of the best super-critical gases for this purpose.
